HAM TIPS
Shank
Half - This is the half of a
whole bone-in ham that contains the
bone half. It is a good
portion of the ham if you are going
to eat the ham and then make soup
with the bone.
Butt
Half - The butt half is the
portion of the bone-in ham that
doesn't have any of the bone
portion. There is more meat
with this ham.
Tavern
Ham - A tavern ham is a hybrid
of the whole bone-in ham. It
contains the shank bone but the butt
half is much bigger. You get
the best of both worlds with this
ham.
Super
Trim - A supertrim ham doesn't
have the fat or the skin on it.
Green
Ham - A green ham is an uncooked
ham and preferred by those who want
to smoke their own ham. It is
similar to a large pork roast.
